- Heat the oil in a heavy pot or Dutch oven over medium-high heat.
- Add onion, sauté for 5-7 minutes, then add garlic and both bell peppers. Cook for an additional 3-5 minutes.
- Crumble in ground beef and cook until browned for 7-10 minutes. Drain excess grease.
- Season the mixture with salt, pepper, chili powder, cumin, paprika, and oregano. Stir for 1-2 minutes.
- Stir in crushed tomatoes, tomato sauce, and diced tomatoes, mixing well.
- Add kidney beans, black beans, and beef broth. Mix until combined and let thicken slightly.
- Bring to a boil, reduce heat, cover and simmer for at least 30 minutes to 1 hour.
- Add apple cider vinegar, stir and adjust seasonings as needed.
