Ingredients
  

For the Cowboy Butter
  • 1 cup unsalted butter substitute with vegan butter for a lactose-free option
  • 4 cloves garlic minced, or use garlic powder
  • ¼ cup fresh parsley chopped; cilantro can be used as a substitute
  • 2 tablespoons fresh chives chopped; can use green onions
  • 1 tablespoon fresh thyme leaves; dried thyme can be substituted
  • 1 tablespoon lemon juice lime juice works as a substitute
  • 1 teaspoon Dijon mustard yellow mustard can be used
  • 1 teaspoon smoked paprika regular paprika if smoked is unavailable
  • ½ teaspoon red pepper flakes omit or reduce for milder heat
  • ½ teaspoon garlic powder optional if using fresh garlic
  • ½ teaspoon onion powder optional if using fresh onion
  • to taste salt
  • to taste freshly ground black pepper
For the Sliders
  • 1.5 pounds sirloin steak can substitute flank or ribeye
  • 2 tablespoons olive oil can use other cooking oils
  • 12 pieces slider buns whole wheat or gluten-free options available
  • 6 slices provolone cheese can substitute with cheddar or pepper jack

Method
 

Prepare Cowboy Butter
  1. Soften 1 cup of unsalted butter in a mixing bowl at room temperature for about 15 minutes. Combine it with 4 minced garlic cloves, ¼ cup chopped fresh parsley, 2 tablespoons chopped fresh chives, 1 tablespoon fresh thyme leaves, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon smoked paprika, ½ teaspoon red pepper flakes, ½ teaspoon garlic powder, ½ teaspoon onion powder, and season with salt and pepper. Mix thoroughly and chill for at least 30 minutes.
Prepare Steak
  1. Pat dry 1.5 pounds of sirloin steak with paper towels and season with salt, black pepper, and garlic/onion powder if desired. Let it sit at room temperature for about 15 minutes.
Sear Steak
  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes on one side. Flip and sear for another 3-4 minutes for medium-rare.
Rest and Slice
  1. Remove the steak from the skillet, tent it with foil and rest for 10 minutes. Slice thinly against the grain.
Assemble Sliders
  1. Toast 12 split slider buns for 2-3 minutes. Spread Cowboy Butter on both halves. Add a slice of provolone cheese, followed by the steak and optional toppings.
Serve
  1. Serve the sliders warm immediately for the best experience.
