Prepare Cowboy Butter
- Soften 1 cup of unsalted butter in a mixing bowl at room temperature for about 15 minutes. Combine it with 4 minced garlic cloves, ¼ cup chopped fresh parsley, 2 tablespoons chopped fresh chives, 1 tablespoon fresh thyme leaves, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon smoked paprika, ½ teaspoon red pepper flakes, ½ teaspoon garlic powder, ½ teaspoon onion powder, and season with salt and pepper. Mix thoroughly and chill for at least 30 minutes.
Prepare Steak
- Pat dry 1.5 pounds of sirloin steak with paper towels and season with salt, black pepper, and garlic/onion powder if desired. Let it sit at room temperature for about 15 minutes.
Sear Steak
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes on one side. Flip and sear for another 3-4 minutes for medium-rare.
Rest and Slice
- Remove the steak from the skillet, tent it with foil and rest for 10 minutes. Slice thinly against the grain.
Assemble Sliders
- Toast 12 split slider buns for 2-3 minutes. Spread Cowboy Butter on both halves. Add a slice of provolone cheese, followed by the steak and optional toppings.
Serve
- Serve the sliders warm immediately for the best experience.
