  • 2 cups Spinach Fresh or frozen
  • 1 cup Mushrooms Sliced
  • 1 zucchini Zucchini Sliced
  • 1 cup Cashews Soaked and blended
  • 1 tablespoon Nutritional yeast For cheesy flavor
  • 1 teaspoon Basil Dried or fresh
  • 1 teaspoon Oregano Dried or fresh
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ cup Almond milk Unsweetened

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cashews, nutritional yeast, almond milk, and spices. Blend until smooth.
  3. In a baking dish, spread a layer of tomato sauce.
  4. Layer lasagna noodles on top of the sauce.
  5. Spread half of the cashew mixture over the noodles.
  6. Add a layer of spinach, mushrooms, and zucchini.
  7. Repeat the layers until all ingredients are used, finishing with tomato sauce on top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 15 minutes.
  10. Let cool for 10 minutes before slicing.
