Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it apart as it cooks for 5-7 minutes until browned.
  2. Add chopped onion to the pot, cooking for about 5 minutes until soft. Stir in minced garlic, Italian seasoning, and red pepper flakes, cooking until fragrant.
  3. Pour in chicken broth and undrained diced tomatoes, stirring well before bringing to a simmer for 2-3 minutes.
  4. Cover the pot, reduce heat to low, and let it simmer for 15 minutes to meld flavors.
  5. Add thawed spinach and stir, allowing the soup to simmer for an additional 5 minutes.
  6. Introduce tortellini to the pot and cook for 3-5 minutes until tender.
  7. Reduce heat to low and mix in heavy cream and Parmesan cheese until smooth.
  8. Adjust seasoning with salt and black pepper to taste.
