  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
For Serving
  • 2 cups Rice long-grain white or brown
  • 1 tablespoon Butter optional
  • Toppings Cheese, Sour Cream, Green Onions, Hot Sauce, Avocado

Step-by-Step Instructions
  1. Prepare Chicken: Pat chicken thighs dry and season with salt and pepper. Set aside.
  2. Sear Chicken: Heat olive oil in a large pot, add chicken thighs, and cook for 5-7 minutes per side. Remove from pot.
