Method
 

Step-by-Step Instructions
  1. Pat chicken breasts dry with paper towels. Heat olive oil in a skillet over medium-high. Sear chicken for 5-7 minutes each side until golden brown.
  2. Sprinkle taco seasoning over the chicken. Add chicken broth and diced tomatoes. Cover and simmer on low for 20-25 minutes until cooked.

  4. In another saucepan, melt Velveeta and Monterey Jack cheese over medium-low heat. Stir in milk gradually until smooth.
  5. Mix cornstarch with water, then stir into cheese sauce and cook for 2-3 minutes until thickened.
  6. Warm tortillas according to package directions to make them pliable.
